Nutmeg

NutmegThe nutmeg tree is any of several species of bushy, evergreen and aromatic trees belonging to the genus Myristica. Native to the Banda Islands in the Moluccas of Indonesia, or Spice Islands, these trees bear long leaves, yellow blooms, and round fleshy fruits that encloses a brown egg-shaped seed. The most important species is Myristica fragrans, which is also cultivated in Penang Island in Malaysia, the Caribbean, and Kerala in South India. Myristica fragrans is a storehouse of many commercial products including essential oils, extracted oleoresins, and nutmeg butter. Apart from nutmeg, nutmeg trees are also significant for producing the spice called mace, which is the dried reddish covering of the seed.

Culinary Uses of Nutmeg

Mostly used in the ground or grated form, nutmeg as a flavor enhancer can be found in many dishes worldwide. Dried shredded nutmeg rind is used to garnish the specialty Malaysian dessert Penang ais kacang. In Indian cuisine, nutmeg is predominantly incorporated in preparing Mughlai cuisine. It is also used in very small quantities in formulating medicines for infants (janma ghutti) and in garam masala. A wide variety of Middle Eastern, Greek, Dutch, Japanese and European dishes are also cooked using nutmeg. In European potato dishes, soups, sauces, wine, eggnog and baked goods like cakes, nutmeg is used as a traditional ingredient.
